Spanish mackerel is prepared in many traditional fashions including smoking. The raritan bay has no sardine fisheries. For those who like eating sardines Mediterranean style (grilled whole on open fire) spanish mackerel may be an excellent soup substitute since its flesh is firm and the fish stays together while grilled on open fire.
