Skate-wing

Skate is a cartilaginous fish, similar to shark and its meat is similar to mako shark. While skate is commonly served in fancy restaurants it is reportedly also found on the plate as bay scallops. In that form bay scallops are punching of the skate wings. Skate wing punchings would have a different muscle fiber alignment. Regardless if it is possible to confuse the two, it can be readily concluded that if you like scallops, skate may not be a bad choice.
